Responsibilities include policy analysis, analysis of government collected data, development of strategies for local/state economic development. Opportunities exist at all levels of government: federal, state and local.
Academic Economist
Responsibilities include teaching, research, and consulting. (Generally, a Ph. D. is required for positions at a university.)
A degree in Economics is also very good preparation for other career objectives (Graduate degrees in Business [MBA], Law, Public Policy, Public Administration, and Economics). For example, Economics graduates score among the highest on the LSAT, which is required for admission to Law School.
