For nighttime deerstrike, just as headlights tend to make a deer stop and stare, using hi-beams or white fog/driving lights can make this effect stronger. Ideally, get some white driving lights and some bright strobes if they're legal in your area. You will have a much easier time hitting the deer. If you stop for a deer and it refuses to move away, turn your headlights off (but leave the parking lights on so you don't get rear-ended) and sound the horn for a moment.

I've heard that very loud exhaust tends to scare deer away.

A deer whistle is a great way to feel confident of warnig deer, but the work about as well as leaning out the window and yelling. Deer are stupid when it comes to traffic and it doesn't matter if you have hundred deer whistles and headlights or whatever else, you can still hit one just as easy.
