Ground beef loses about 20-25% of its weight in cooking depending on the amount of fat. So figure out how much you want your patties to weigh after cooking and increase by about 1/4.
If you want to serve 4 oz patties you would multiply 4 x 40 = 160 oz and increase this by about 20 to 25%. 160 oz is 10 lbs and increased by 25% = 12-1/2 lbs. . If you want 6 oz patties ... 6 x 40 = 240 oz. 240 oz = 15 lbs and increased by 25% = 18-3/4 lb.
For 8 oz patties you would need 25 lbs
most people use 1/4 Lb meat patties if one is not enough they can have a second lots better than throwing way a whole lot of part eaten burgers
