Food poisoning is a generic term for any food-borne illness. There are actually several different kinds of food-borne illness: those caused by pre-formed toxins, those caused directly by bacteria, and those caused by toxins formed once the bacteria have entered the body.
The most common food poisoning caused by pre-formed toxin is that caused by Bacillus cereus, classically seen after ingesting reheated rice. This causes a very early onset of vomiting and abdominal pain. Another, not so common, is botulism. The toxin, botulinum toxin, is formed by the bacterium Clostridium botulinum, frequently in improperly canned foods. This is not so common anymore, but still occurs. Botulism causes paralysis that begins with the head and moves toward the feet. This is important in distinguishing it from other causes of paralysis, such as Guillian-Barre syndrome. Antibiotics are useless in cases of food poisoning caused by pre-formed toxins. In the case of botulism, there is an antitoxin available, but in many cases, the treatment is supportive and the disease will run its course.
Food poisonings caused by direct bacterial effects include diarrheal illnesses caused by salmonella, shigella, campylobacter, and some forms of E. coli (EHEC, 0157:H7). These are spread, most commonly, by improperly prepared food. In some cases, they are spread by the fecal-oral route, meaning stool particles contaminate food, which another person eats. Hepatitis A is another food-borne illness, although not necessarily considered food poisoning. The food poisoning caused by these bacteria classically causes bloody diarrhea, fever, and abdominal pain. Antibiotics can sometimes be useful for these forms of illness.
The final classification of food poisoning is enterotoxic food poisoning. This is caused by ingestion of a bacteria that then proliferates in the intestine and begins to excrete a toxin that causes disease. The classic here is cholera. Caused by the motile bacterium Vibrio cholerae, this little bacteria produces a very potent toxin that causes severe diarrhea, dehydration, and death if not treated adequately. Another is enterotoxigenic E. coli. This form of E. coli produces a cholera-like toxin that causes a similar illness to cholera.
